BUFALA MOZZARELLA WITH AUBERGINE TAPENADE

The best ingredients don't require too much work to shine and taste absolutely delicious! By combining two #italian classic flavours, you can really make magic!


Ingredients

1 Bufala Mozzarella - we love (BRAND)

Aubergine

Olive Oil

Garlic

Tomato Paste

Capers

1/2 glass of water

Salt, pepper

Fresh Basil


Procedure

To prepare the tapenade, cut the aubergine into small dices. In a frying pan, prepare a few pieces of garlic and gently fry them off in generous Olive Oil.

Throw the aubergine cubes and let them get crispy at high heat. After a few minutes, add the half glass of water, tomato paste and a few capers for saltiness. Season all well and let it cook at low heat to let the aubergine soak up the tomato flavour. After about 10 minutes, turn the heat up to let the residual water evaporate.

Serve at the centre of the plate and add to this wonderful bed a beautiful Bufala Mozzarella. Garnish with delicious Olive Oil and fresh basil leaves.
