ORANGE FLAN

A #vitamins packed sweet treat to brighten up an indulgent moment!

Ingredients for 4 Flans

200ml Milk - can replace with plant based for #vegan version

200ml Cream - can replace with plant based for vegan version

2 eggs

100g sugar

1 orange

1 lemon

Cinnamon


Start by prepping the caramel top layer by placing 50g sugar in a pan and adding 2tbs water, cook at low heat to let the sugar melt and form the caramel without burning. Place the caramel at the bottom of your muffin baking tray making sure it covers the base layer.


In a bowl, mix the eggs with the rest of the sugar, some cinnamon, the zest of a whole orange and the zest of half a lemon. Mix well and then add the cream and the milk. Whisk everything to obtain a creamy and fluffy mixture. Place the batter over your caramel base.


Put the muffin tray in a bigger tray covered with hot water, to make sure the water soaks 2/3 of the muffin height. Place in the oven at 160 for 80 min.

Once cooked, take the muffin tray out and place in the fridge to let it and let them cool in the fridge for at least 2 hours.


After they have cooled in the fridge take the flans out of the baking tray and serve them with the caramel layer on top. Garnish with fresh orange slices or caramelised orange peels.
