ONION FRITTATA

A simple yet delicious frittata, perfect as an Entree or on its own! Great for #vegetarians or anyone looking to add more #protein in their meal!

Ingredients

4 eggs

2 onions

Milk

salt, pepper

Olive oil

Nutmeg

Fresh parsley


Procedure

Dice finely the onions and cook in a pan with olive oil and seasoning. Cook for 2 minutes at high heat to caramelise, then add half a glass of water to soften the onions and reduce heat.


In a bowl, crack four eggs and season, adding a dash of milk and a generous amount of nutmeg. Once the onions are almost cooked, pour the egg mix in the pan and spread evenly. Check regularly, until the bottom part is fully cooked and crispy.After about 5 minutes, place a plate or pan lid on the top of the pan and flip it to turn your frittata.

Let the other side cook until firm and crispy.


Best served at room temperature, this frittata is definitely a crowd pleaser. And perfect for a packed lunch the next day with the leftovers (if any!)
