STUFFED SQUID WITH SPICY RED SAUCE

A personal favourite, a #seafood dish with a kick that tastes like home.

Ingredients

Whole Squid Broccoli Canned Tuna  Parsley  Anchovies Tomato Paste Chillies  White Wine Olive Oil, Salt and Pepper


Cut broccoli into pieces and boil till tender. Clean well the squid, making sure to take out the bone inside the tube; cut also the tentacles and put aside. In a bowl, mix the boiled broccoli with the canned tuna, a couple of anchovies, oil pepper and salt. Fill the squid tubes with the mix and close the edges with a toothpick. 


In a hot pan, melt a couple of anchovies in olive oil and chilly flakes. Once melted, pan fry the stuffed squid with tentacles for a few minutes. Pour half a glass of white wine and let cook at high heat to make the alcohol evaporate. Add tomato paste and water. Let cook on low heat in covered pan for about 20 minutes, turning the squid regularly to cook evenly and the red sauce becomes a fishy and tasty cream. 


Serve with pan fried broccoli with a generous pour of red sauce all over.
