A tasty meat with it's strong gamey flavour pairs so well with the softness of the broad beans and sweet juicy spring onions!
Ingredients for 4 people: Whole rabbit Broad beens Spring onions Garlic Salt pepper Olive oil White wine Fresh parsley
Start by de boning the rabbit and cut into big pieces. In a pan prepare some olive oil and garlic and pan fry the rabbit at high heat to get the outer part nice and caramelised. Then wash with half glass of white wine and a bit of water lowering the heat. After about 10 mins add the whole spring onions and let them soak up all the juices for about 10 mins more. Then add the broad beans and finish cooking reducing the sauce. Serve with a sprinkle of fresh parsley!
