CHICKEN WINGS AND PEAS STEW

A warming and comforting dinner for one of those nights when you need to nourish your body and your soul.

Ingredients For 4 people 8 chicken wings 1 can of green peas - or frozen Half white onion 250g plum tomato sauce Garlic Olive oil Rosemary Half glass white wine Salt pepper Start by preparing the wings making sure they are clean and with no residual feathers. Prepare a pan with some garlic, rosemary and olive oil; start to gently brown the garlic and add the finely diced onion.


Add the wings and cook at high heat for about 5 minutes to make them crispy and brown on the outside; wash them with a splash of white wine and let them cook at high heat until the alcohol has evaporated. Then add the tomato sauce with a bit of water and cover with a lid, gently turning them and checking they cook well and soak up all the sauce.


Leave for about 20/30 minutes making sure the sauce doesn’t evaporate too much, then add the peas and stir them in the sauce for about 5 minutes. Plate with a base of peas in tomato sauce, topped with the juicy wings.
